Curried Lentil Soup

Ingredients

 2 Cups Red Lentils (soak for 3-7 hrs for easy digestion)

6 Cups water,  vegetable, or chicken broth

1/4 onion diced

1 Large carrot diced

2 tbsp curry powder

1 tbsp olive oil

Salt to taste

 

Directions

 1. Saute' carrot and onion in olive oil

2. When veggies are soft, add curry powder and continue to saute' a few seconds to release the flavor.

3. Add lentils and water

4. Simmer for 1/2 hr- 45 min

Add salt as desired and serve
