Nut Flour Pancakes

When I first started my new eating plan I was ecstatic with how good I felt.  I could never imagine going back to eating things which I knew would hurt.  But as time went on I started to crave some of the things I had while I was sick.  One of those things was "Saturday Morning Pancakes".  Being a tradition in our house and something everyone looked forward to, except me.  So I started experimenting with recipes and through trial and error came up with this simple pancake recipe.  It is now one of our favorites.

1 1/2 cups nut flour 

4 eggs

1 Tbs olive oil

1/2 tsp salt

1/8 tsp baking powder


  1. Mix dry ingredients together.
  2. Mix eggs and oil together.
  3. Pour egg mixture into dry ingredients and stir until combined. 
  4. Heat a lightly oiled griddle or frying pan over medium high heat. 
  5. Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. 
  6. Brown on both sides and serve hot.

Serve with honey, syrup, or fruit
